Potato podimas













Ingredients
Potato - 2 cups (Wash, remove skin and cut to small cubes)
Oil - 2 tblsp
Mutard - 1 tsp
Urud dal - 1 tsp
Curry leaves - 1 spring
Home made sambar powder - 1 tblsp
Turmeric powder - 1/3 tsp
Salt

Preparation
Heat oil in pan and temper with mustard, urud dal and curry leaves. Add potato, tumeric powder, sambar powder and salt. Mix well and close pan. Saute in-between. Once potato is golden brown in color and cooked, switch off the stove. Serve hot and crisp. The best side for sambar, curd, rasam, coconut rice, lemon rice, pulao and so on..!


Note
1. No need to add water. Cook in slow or medium flame. But not in high flame.
2. Sprinkle some rice flour or besan flour at end to make it more crisp.
